This historic pastificio is a small artisan company that has been producing pasta for centuries. Located in the historic center of Gragnano, it is recognized as the birthplace of macaroni. We have recreated the manual production methods that are typical of Gragnano, restoring traditions in the only way possible, returning to the production of macaroni.

We have recreated the manual production methods that are typical of Gragnano, restoring traditions in the only way possible, returning to the production of macaroni.Start your pasta experience at the wheat gallery, a room that exhibits our history and our dry pasta prepared with loving care. You can see our machinery and documentation, communicating the values of a typical Gragnano product. Still visible is where the wheat used to be washed and processed before being used for the pasta production, together with various tools once used for this purpose.
After the wheat gallery, we will give you a practical demonstration on how to produce a few types of pasta along with a detailed explanation of the whole procedure and machines used. We will show you our traditional processes, based solely on the use of large-grain durum wheat semolina (as was once milled on the site), with high levels of gluten and proteins, all combined gently with water from nearby springs. After the pasta is thoroughly worked, it is given different shapes. Each type of pasta is produced by a different nozzle made entirely of bronze. This gives the pasta its high quality, with a rougher surface that combines better with the pasta sauce.
After this pasta experience we return to the wheat gallery where you will have a delicious tasting of two pasta dishes prepared exclusively for you and a typical Gragnano wine (fizzy red wine).
