At the end of the lesson everyone will sit around the kitchen table and enjoy a tasty lunch and wine tasting with a selection of Tuscan wines.
The day begins with a 45 minute drive through the Magra river valley, enjoying scenic views of the Apennine Mountains, into the heart of Lunigiana where we discover the picturesque ancient flour mill.
We are welcomed with a short tour of the flour mill or 'mulino' where you get a feel of the history of the location. At around 11.30 we began the 2 hour cooking course, the chef will introduce the local products and culture of the dish to be prepared. After watching the chef demonstrate how to make the pasta dough, he will then guide you through the process of making your own typical 'maltagliati' pasta. The chef will demonstrate the process and techniques of some traditional Lunigianan cuisine, vegetable tarts and the sauces which will be used to dress our home-made pasta.
We take a short break while the chef will puts the vegetable tarts in the oven, next we sit down with a sommilier to enjoy a wine tasting or 'degustazione' of the award winning wine produced at the vineyard, accompanied by local cheese and focaccia.
Time to experience the fruits of our labor ! The pasta is added to the large pot and we sit down to enjoy vegetable tart, followed by 'pasta con salsa di noce' or pasta with a creamy nut sauce.
It's then time to relax, or walk around the grape vines, soak in the rustic atmosphere of the ancient stone buildings and grounds.
At the end of the day all guests receive full printed recipe sheets to help replicate the dishes at home.
