This habit is still alive in our home-made cooking.

A real hands-on approach in preparing succulent and authentic recipes made with simple flavours which are typical of the Mediterranean cuisine that will capture and fascinate you with recipes kept from the precious cookbooks written by the ladies of the owner’s family, who perceived the influence of the Southern Kingdom of Naples and the two Sicilies until the late 1800’s.
The cookery course starts in Mola di Bari at 9.30 am in Lungomare, the sea front next to the charming little fishing harbour. Guided visit to the fruit and vegetable market: walking through the narrow streets of the old town of Mola di Bari stop to the farmer houses to buy what we need for the cooking class. Guided visit to the fish market, to buy fresh fish. For fish the only must is: 'appena pescato' meaning just freshly caught!
Then in masseria for the morning class:
Fresh pasta, that you will cook with vegetables and legumes, focaccia, the typical Puglia bread, panzerotti, like a fried pizza, with tomatoes mozzarella and basil. Lunch with all these dishes.
In the afternoon the cooking class is about fish. Rice potatoes and mussels, octopus or squid, or what the fisherman will freshly offer us!
The cake will be pizza dolce: a ricotta cheese cake, or ice cream in summer, or rhum babà or other seasonal cakes for dinner.
During the cookery course you will taste also the gorgeous heritage of Puglia wines.
The course finishes after dinner at 8.30pm.
