Mola di Bari is a quiet village along the sea, forgotten by mass tourism, where traditional healthy food habits still survive: Fresh fish, fresh vegetables, legumes and fresh pasta are the basic food for Mola di Bari people. During this 2-nights experience you will learn the recipes of Rita, the owner of the Masseria, jumping in an atmosphere of the glorious Kingdom of the Two Sicilie.The Masseria is a charming countryside mansion surrounded by olive groves and vineyards, located in the heart of the authentic Puglia Rustica.
It stands on a hillock close to the Medieval town of Conversano and 4 km far from the coast, overlooking the sea of Mola di Bari, along the “Roads” of the Romanesque Cathedrals and of the Medieval Castles and very next to Valle d’Itria, the land of Trulli.
Built by the owner's ancestors, once a 17th century olive oil mill and then summer residence of the family, the Masseria is today a unique place for travellers to relax and find tranquillity, far away from the hectic cities. Time has stopped here centuries ago and has preserved its history and culture unaltered through the authentic lifestyle of those days, the genuine foods, extra virgin olive oils and superb wines, and the true art of hospitality. About the homestay in Masseria, all the bedrooms have original antique family furniture and welcome the guests in an atmosphere which is both elegant and romantic, without losing the warmth of a family home.
Rita, the owner, a retired journalist with a true passion for cooking and history, will welcome you through the original Apulia culinary history and recipes. You will experience traditional recipes that still survive on the tables of farmers and fishermen, and lost recipes by noble families, but still alive in the kitchen of Rita, from the notebooks of her great mothers and great aunts.
You’ll walk along the narrow streets of Mola, knocking on the doors of the farmers, who display their daily products of vegetables and fruit on “seggioline,” or little chairs, outdoors in this bustling little town. You will always receive a complimentary smile when you knock on the door to ask for a kilo of chicories, or cauliflowers, artichokes or “cime di rape.” Here we’ll buy the products that we need for our cooking lesson. We will explore every one's favorite dish, “la pasta.” You will learn to prepare fresh pasta and to cook many recipes with pasta and vegetables, pasta with legumes and much more that you will eat at the end of your cookery classes, for lunch and for dinner. After breakfast we prepare fresh bread and taralli (savory bisquits) and other cakes that will be ready for the bye bye dinner. In the afternoon back to Mola little fishing harbour, just in time to the arrival of the fishing boats, then we buy the fish for our cooking class and for the bye bye dinner. Before dinner wine tasting of 8 great wines of Puglia: 2 White wines, 2 Pink wines, 3 Red wines, 2 Dessert wines (After dinner with the cakes). Night in Masseria.
